What opportunity is right in front of you?

This is in Response to the Questions and Reflections for September 17, 2008:
Ah! Fall in Michigan! This time of year I have the unique oppertunity to harvest and save the goodness of the earth. I've canned beets, pickles, beans, made bortst and salsa. I am harvesting flower seeds, vegetables and herbs. Yes, I always have the opportunity to rush to the store and buy all of these things anytime of year, but there is nothing like opening a jar that I have canned and taste the sunshine on a dull winter day!

I have that kind of opportunity waiting for me across the back fence. The neighbours have an apple tree, and they can't use all of them. I'll be making applesauce and freezing pies. Fall makes me want to can and perserve things - but that's because I saw my Mom and Grandmother before me do it. I haven't made my Grandmother's dark fruitcake in a few years, but yesterday something whispered to me that I should.
Wow, you have been productive for sure!!! There is nothing more satisfying … well, I guess I should never say “nothing”, :) but it is very satisfying to take a jar of something canned and serve it on a dreary winter's day. My favorite is green beans. I haven't canned for years, but I bought some jars this summer with the intention of canning at least a few jars of green beans. Hmmmm, didn't quite get there, but maybe it's not too late.
